Savory Eggs

  1. Blend batter: Combine crêpe batter ingredients in a blender until smooth. Let rest 30 minutes.
  2. Cook crêpes: Melt butter in a crepe pan, pour a small amount of batter, cook 1 minute per side, and repeat with remaining batter.
  3. Assemble: In a buttered skillet, place one cooked crêpe, add ham and cheese, then crack an egg on top.
  4. Fold & cook: Fold the edges to form a square, cover, and cook about 3 minutes until the egg sets.
  5. Serve: Sprinkle with salt, pepper, and chives. Enjoy! 🥞🍳🧀

Meaty Pizza Crêpes

Prepare: In a blender, combine flour, eggs, milk, melted butter, and salt. Blend until smooth, then let rest 20–30 minutes.

Cook: Heat a lightly buttered nonstick pan over medium heat. and cook the meat of your preference on the side
Pour about ¼ cup batter, tilt to spread thinly, cook 1 minute per side, then set aside.
Assemble: Spread 1–2 tablespoons of pizza sauce on a crêpe.
Add mozzarella, sausage, pepperoni, and vegetables. Sprinkle oregano.
Melt and Fold: Return the filled crêpe to the pan over low heat. Cover for 1–2 minutes until the cheese melts.
Fold in half or quarters.
Serve: Top with fresh basil, Parmesan, and optional red pepper flakes. Serve warm and enjoy the gooey, savory goodness!🍕🧀🍅🌿



Folded Raspberry Crêpes

Make the batter:
Add flour, eggs, milk, melted butter, sugar, vanilla, and salt to a blender.
Blend until smooth, then let the batter rest for 20–30 minutes.
Cook the crêpes:
Heat a lightly buttered nonstick pan over medium heat.
Pour in about ¼ cup of batter, tilt to spread evenly.
Cook for 1 minute, flip, and cook for 20–30 seconds more.
Transfer to a plate and repeat with remaining batter.
Prepare the raspberry filling:
In a small saucepan, combine raspberries, sugar, and lemon juice.
Cook over medium heat for 3–4 minutes until the berries soften and release juice.
Remove from heat and let cool slightly.
Assemble the crêpes:
Spread a spoonful of whipped cream (or mascarpone) on half of a crêpe.
Spoon raspberry sauce over it.
Fold the crêpe in half, then in half again to make a triangle.
Serve:
Dust with powdered sugar and top with a few fresh raspberries.
