Is carbon steel hard to maintain?

Easier than you think. Rinse with hot water, wipe dry, rub a little oil on it. That’s it. Don’t use soap or the dishwasher. The natural nonstick “seasoning” builds up the more you cook, so the pan literally gets better with use.

Will it rust?

Only if you leave it wet. Dry it after washing and lightly oil it before storing — same routine as a cast iron pan. With basic care, it’ll never rust.

What size should I get?

The 14" is our most popular — wide enough for full-size dinner crepes, but still light enough to handle one-handed.

Does it work on induction, gas, and electric?
